Ingredients for Prosciutto Wrapped Dates:

  • 1 package dates

  • 3 oz goat cheese

  • 1 package cream cheese

  • 1 lemon, zested

  • Prosciutto

  • ½ cup honey

  • Fresh rosemary, to taste

  • Fresh thyme, to taste

  • Fresh sage, to taste

  • ½ cup Daily Crunch Unsalted or Sea Salt Almonds, chopped

Directions for Prosciutto Wrapped Dates:

  1. Make the filling:
    1. In a bowl, mix the cream cheese, goat cheese, and lemon zest until smooth.
  2. Prep the dates:
    1. De-pit each date and stuff with a scoop of the cheese mixture. Wrap each stuffed date tightly with a strip of prosciutto. Place on a lined, greased baking sheet.
  3. Infuse the honey:
    1. Finely chop the rosemary, thyme, and sage. In a small pot, gently bring the honey and chopped herbs to a boil. Remove from heat. Chop your almonds while the honey cools slightly.
  4. Bake:
    1. Preheat the oven to 350°F. Bake the dates for 15–20 minutes, until the prosciutto crisps. For the last 2 minutes, switch to broil to caramelize.
  5. Reheat honey if needed:
    1. If the herbed honey thickens, briefly reheat to loosen it back to a drizzleable consistency.
  6. Finish & serve:
    1. Drizzle the warm herbed honey over the baked dates and sprinkle with chopped Daily Crunch almonds. Serve immediately!
